Lamb is a meat that is severely underused in the United States. It has a unique flavor, but when raised well, it is tender and delicious. When folks tell me they don't like lamb because it has a bad taste, I tell them they've had mutton, not lamb! There's a reason it is widely used around the world as a primary source of protein in so many countries.
